{"id":1368,"date":"2026-02-15T18:41:27","date_gmt":"2026-02-15T18:41:27","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:41:27","modified_gmt":"2026-02-15T18:41:27","slug":"apple-cider-cake","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/cake\/blog\/2026\/02\/15\/apple-cider-cake\/","title":{"rendered":"Apple Cider Cake"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>8 apples, peeled, cored and quartered<br \/>\n1 C. apple cider<br \/>\n1 C. extra virgin olive oil<br \/>\n3 C. flour<br \/>\n1-1\/2 tsp. baking powder<br \/>\n5 eggs<br \/>\n1-1\/2 C. sugar<br \/>\n1 C. heavy cream, whipped<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Place apples and 1\/2 C. cider in saucepan. Cover and bring to a boil. Lower heat and  simmer for 10 minutes. Mash the apples with a fork. Preheat the oven to 325. Brush a  bundt pan with a bit of the olive oil. Dust with flour and tap out any excess. Combine  flour and baking powder in a bowl. Stir together the remaining cider and 1\/2 C. of the  applesauce. In a large bowl, whip eggs with sugar until tripled in volume, about 8  minutes. Fold in half of the dry ingredients until just combined. Fold in half of the cider applesauce  mixture. Gently fold in the olive oil. Alternately add the remaining dry  ingredients and the cider mixture. Pour the batter into prepared pan, and bake for 1 hour  10 minutes or until a toothpick tests clean. Cool completely.
