Greek Honey Cake
Ingredients
Honey syrup
1 C. sugar
1 C. honey
3/4 C. water
1 tsp. lemon juice
Cake
3/4 C. butter; softened
3/4 C. sugar
3 eggs
1/4 C. milk
1 C. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon
1 tsp. orange rind; grated
1 C. walnuts; chopped
Cooking Instructions
Combine sugar, honey, and water in a saucepan. Simmer 5 minutes. Add the lemon juice and boil 2 minutes. Cool. Cake: Combine flour, baking powder, salt, and orange rind. Blend dry ingredients and nuts into creamed mixture. Pour into a greased and floured 9 x 9 baking pan. Bake in a 350 degree oven until golden and tests done with a wooden pick. Cool 10 minutes. Cut into diamond shapes. Pour honey syrup over cake.
