Golden Fig Cake
Ingredients
1/2 C. sliced natural almonds
1 1/4 tsp. soda
2/3 C. butter
4 eggs
1/3 C. sour cream
6 ounce package chopped dried figs
2 1/2 C. all purpose flour
1/4 tsp. salt
1 C. light brown sugar, packed
2/3 C. orange marmalade
2/3 C. almond flavored liquor
1 carton confectioners’ sugar
Cooking Instructions
Preheat oven to 350. Very generously butter 9 C. bundt pan, sprinkle with almonds, patting gently to cover side. Set aside. Mix flour, soda, and salt in small bowl, set aside. In large mixer bowl, cream butter plus sugar until light fluffy. Add eggs, 1 at a time, beating after each addition. Stir in marmalade plus sour cream, (mixture will look curdled) Add flour mixture alternately with liquor (for non-alcoholic, can use orange juice instead of liquor, liquor if for flavoring alone, all alcohol is burned off when cooking blending well after each addition until batter is smooth. Stir in figs. Turn into prepared bundt pan; spread evenly. Bake 60-70 minutes or until wood pick inserted in center comes out clean. Remove from oven plus cool 10 minutes. Insert on wire rack plus cool completely.
