Family Favorite Cake
Ingredients
3/4 C. diet margarine
1 1/2 C. non-nutritive sweetener
4 tsp. baking powder
1/2 tsp. salt
3 C. flour
1 C. skim milk
1 tsp. almond extract
3/4 C. egg whites (4-5 eggs)
Creamy Frosting:
1/2 C. non fat cottage cheese, sieved
1/8 tsp. salt
1/2 Tbsp. diet margarine, melted
1/2 C. Equal-Sugar Twin
1 tsp. vanilla
Cooking Instructions
Preheat oven to 375. Cream margarine and sweetener. Sift baking powder, salt, flour, and then add alternately with skim milk to creamed mixture. Add almond extract, and beat egg whites until stiff peaks form, and fold in. Pour into 2 well-greased 9 inch layer pans. Bake for about 30 minutes. Cool for a few minutes, then remove from pans and cool further on wire racks. Top with Creamy Frosting. Creamy Frosting: Mix all ingredients. Beat until smooth. Spread on Cake. Frosts one cake.
