Banana Pudding Cake
Ingredients
1 box yellow cake mix
1 small package banana instant pudding mix
4 eggs
1 C. water
1/4 C. vegetable oil
3/4 C. mashed ripe banana
2 C. confectioners sugar
2 Tbsp. milk (may need up to 3 Tbsp.)
Dash vanilla extract
1/2 C. finely chopped walnuts, optional
Cooking Instructions
Combine cake mix, pudding mix, eggs, water, vegetable oil and banana. Beat with electric mixer for 2 minutes. Pour into a greased and floured bundt pan. Bake in a preheated 350 oven for 50 to 55 minutes or until cake tests done. Cool cake on a wire rack for 15 minutes then remove cake and continue to cool on rack. Glaze: Wisk confectioners’ sugar, milk and vanilla in a bowl until smooth and of a drizzling consistency. When cake is cooled, drizzle icing over cake with a zigzag back and forth motion. Sprinkle chopped nuts over wet icing.
