{"id":59753,"date":"2026-02-22T22:26:51","date_gmt":"2026-02-22T22:26:51","guid":{"rendered":"http:\/\/localhost\/old1\/austrian\/austrian-cheesecake"},"modified":"2026-02-22T22:26:51","modified_gmt":"2026-02-22T22:26:51","slug":"austrian-cheesecake","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/austrian\/blog\/2026\/02\/22\/austrian-cheesecake\/","title":{"rendered":"Austrian Cheesecake"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>5oz softened butter<br \/>\n10oz caster sugar<br \/>\n1.25lb full fat curd cheese or ricotta<br \/>\n4 large eggs, separated<br \/>\n6oz ground almonds<br \/>\n2oz fine polenta<br \/>\n4oz sultanas<br \/>\ngrated rind and juice of 2 lemons<br \/>\nicing sugar to dust<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Pre-heat the oven to 375F.  Lighly grease  a 9inch loose bottomed cake tine and line the base with baking parchment.<br \/>\nCombine the butter, sugar, curd cheese\/ricotta and egg yolks and beat together with an electric whisk until smooth and creamy. Stir in the ground almonds, sultanas, polenta and grated rind and juice of the lemon. Leave to stand for 10 minutes to thicken.<br \/>\nIn a separate bowl, whisk the egg whites until stiff and fold into the mixture. Turn the mixture into the prepared tin.<br \/>\nBake for 1 hour or until firm to the touch. Cover loosely with foil about 30 mins into baking time to prevent the cake from browning too much.<br \/>\nWhen cooked, leave the cheesecake to cool in the oven for about 1 hour. Remove from the tin and dust with icing sugar before serving<\/p>\n<p>&nbsp;<br \/>&nbsp;<br \/>&nbsp;And the Word became flesh, and dwelt among us, and we saw His glory, glory as of the only begotten from the Father, full of grace and truth.
