{"id":57,"date":"2026-02-15T18:26:49","date_gmt":"2026-02-15T18:26:49","guid":{"rendered":"https:\/\/recipe4thecook.com\/djaj-mqalli-chicken-with-lemons-and-olives\/"},"modified":"2026-02-15T18:26:49","modified_gmt":"2026-02-15T18:26:49","slug":"djaj-mqalli-chicken-with-lemons-and-olives","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/african\/blog\/2026\/02\/15\/djaj-mqalli-chicken-with-lemons-and-olives\/","title":{"rendered":"Djaj Mqalli-Chicken With Lemons And Olives"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 c onion,Diced<br \/>\n12 t ginger<br \/>\n14 t saffron<br \/>\n1 cl garlic &#8211;,Minced<br \/>\n1 t salt<br \/>\n1 c oil<br \/>\n2 c water,Warm<br \/>\n3 1\/2 lb chicken &#8212; cut-up<br \/>\n1 bn cilantro &#8211;,Minced<br \/>\n1 c kalamata olives<br \/>\n1 chicken liver &#8212; optional<br \/>\n1 lemon juice<br \/>\n1 pickled lemon &#8212; cut in<br \/>\n1 strips<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Mix onion, ginger, saffron, garlic, salt, oil and water in skillet. Stir until creamy. Bring to boil. Add chicken pieces, cilantro and liver. Cover skillet and cook over medium-high heat 45 to 50 minutes. When liver is done, remove from skillet and mash, then set aside.<br \/>\nCheck dish as it cooks, and add hot water as needed.<\/p>\n<p>When chicken is done, remove pieces to serving dish. Skim fat from cooking liquid and reduce; if necessary. Add liver. Taste and add lemon juice, if desired. Pour contents of pan over chicken.
