Tuna Shortcake Roll
Ingredients
2 C. flour
3 tsp. baking powder
1/2 tsp. salt
1/4 C. butter or margarine
1 egg, beaten
1/2 C. milk
FILLING:
2 cans tuna (or 1 lg. can)
1/4 C. milk
2 tsp. chopped onion
1 1/2 Tbsp. parsley
1/4 C. chopped sweet pickle
1/2 tsp. salt
CHEESE SAUCE:
1/2 lb. American cheese
1/4 C. milk
Cooking Instructions
Sift together flour, baking powder and salt. Cut in the butter. Beat egg and add milk to it. Add this to the flour mixture. Roll into a rectangular shape about 1/4″ thick.
FILLING:
Mix these ingredients together and spread over the dough rectangles. Roll up like a jelly roll. Bake on greased sheet in 425 degree oven for 40 minutes or until well baked and lightly browned. Slice and serve with Cheese Sauce.
CHEESE SAUCE:
Melt cheese in double boiler. Add milk gradually. Stir until sauce is smooth.
