Three Cheese Puff Breakfast Souffle
Ingredients
6 eggs
1/2 C. all purpose flour
1 tsp. baking powder
1 C. milk
8 oz. cottage cheese
3 oz. cream cheese, cut into small cubes
6 Tbsp. firm butter or margarine, cut into 1/4 inch cubes
1 lb. Monterey Jack cheese, cut into cubes
Cooking Instructions
In a large bowl, beat the eggs. Blend in flour and baking powder. Stir in milk. Beat until smooth. Stir in remaining ingredients. Pour into greased 2 quart shallow baking dish. Bake at 350 degrees for 45 minutes or until set. Serves 6 to 8. Delicious for brunch.
