Southwest Turkey Tenderloin Stew
Ingredients
1 1/2 pounds turkey tenderloins cut 3/4 inch pieces
1 Tbsp. chili powder
1 tsp. ground cumin
3/4 tsp. salt
1 red bell pepper cut 3/4 inch pieces
1 green bell pepper cut 3/4 inch pieces
3/4 C. chopped red or yellow onion
3 garlic cloves minced
1 can chili beans in spicy sauce-15 1/2 oz. un-drained
1 can chili style stewed tomatoes-14 1/2 oz. un-drained
3/4 C. prepared salsa or picante sauce
Chopped fresh cilantro optional
Cooking Instructions
Place turkey in crock pot. Sprinkle chili powder, cumin, and salt over turkey, toss to coat. Add red and green bell pepper, onion, garlic, beans, tomatoes, and salsa. Mix well. Cover and cook on low 5 hours or until turkey is no longer pink in centers and vegetables are crisp tender. Ladle into bowls and garnish with cilantro, if desired.
