Shrimp Casserole
Ingredients
6 eggs
1/2 tsp. dry mustard
2 Tbsp. mayonnaise
1 Tbsp. pickle relish
3 Tbsp. butter
3 Tbsp. flour
1 1/2 C. milk
6 oz. sharp Cheddar cheese, grated
1 (6 oz.) bag potato chips, slightly
crushed
1 lb. shrimp
Cooking Instructions
Hard cook eggs. Cut in half lengthwise. Mash yolks with dry mustard, mayonnaise, pickle relish, salt, and pepper. Refill whites. Make white sauce of melted butter. Stir in flour. Add milk. Stir until smooth. Add cheese. Stir over low heat until melted. Cook and clean shrimp. Start layering in casserole as follows: Potato chips, eggs cut side down, cheese sauce, potato chips, shrimp, cheese sauce, and potato chips. Bake 30 minutes in 350 degree oven until bubbly and lightly browned.
