Pineapple Crumble
Ingredients
Filling:
16-oz. can unsweetened pineapple in own juice, crushed and drained
2 medium pears, peeled, cored and diced
1 tsp. vanilla extract
1/2 tsp. cinnamon
1 dash nutmeg
Crumb Topping:
3 Tbsp. soy or safflower margarine
2/3 C. matzo meal
1/3 C. ground walnuts
1/2 C. light brown sugar, or Sugar Twin equal to 1/2 C. brown sugar
1/2 tsp. cinnamon
Cooking Instructions
Preheat oven to 350 degrees F. Combine filling ingredients in a mixing bowl and pat into a 9-inch square baking pan. Melt margarine in a skillet and remove from heat. Stir in the remaining topping ingredients until evenly coated with margarine. Sprinkle evenly over top of pineapple mixture. Bake 25 to 30 minutes.
