New England Fish Mushroom Chowder
Ingredients
12 oz. fresh mushrooms (or canned)
2 Tbsp. butter
1 C. chopped onion
1/2 C. diced carrots
3/4 C. water
3/4 lb. potatoes, peeled & diced
(about 1 C.)
1 lb. cod fillets, cut into 1 inch
chunks
2 C. milk
2 Tbsp. flour
1 Tbsp. Worcestershire sauce
1 tsp. salt
1/4 tsp. thyme leaves, crushed
1/8 tsp. black pepper
Cooking Instructions
In a medium sauce pot melt butter. Add mushrooms, onion and carrots, saute until tender, about 5 minutes. Add water and potatoes, bring to boil. Reduce heat an simmer, covered, until potatoes are tender, about 15 minutes. Add fish, continue to simmer covered until fish flake easily when tested with fork, about 8 minutes.
