Mandarin Rice Pudding
Ingredients
2 1/2 C. Cooked rice
1 C. Undiluted evaporated milk
1/2 C. Mandarin orange liquid (can)
1/2 C. Light brown sugar
3 Tbsp. Butter, melted
1 tsp. Vanilla
3 Eggs, beaten
1/2 C. Raisins
1 C. Drained mandarin orange sections
Cooking Instructions
Combine rice with all ingredients except orange sections. Mix well. Lightly butter crock pot. Pour in rice mixture. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours. Stir during first 30 minutes. During last half-hour, stir in orange sections.
