Hogback Pork Chops
Ingredients
8 pork chops (3/4-inch thick)
1/2 C. apple juice
1/2 C. light raisins
1 tsp. salt
1/4 C. brown sugar, packed
1/4 tsp. ground nutmeg
1/4 tsp. ground cinnamon
3 large red apples, cut in 6 to 8 wedges
1/2 C. water
Cooking Instructions
Brown chops in greased skillet over medium heat. Arrange chops in shallow 2-quart baking dish. Pour apple juice over chops, sprinkle with raisins and salt. Cover and bake 45 minutes at 350 degrees. Turn chops. Combine brown sugar, nutmeg and cinnamon; coat apple wedges with mixture. Arrange apples around chops. Sprinkle apples with remaining sugar mixture and pour water over all. Cover and bake an additional 15 minutes.
