Gingersoy Fish Steaks
Ingredients
6 (1 inch thick) fish steaks*
4 garlic cloves, crushed
3 Tbsp. soy sauce
1 Tbsp. rice vinegar or dry sherry
3 Tbsp. vegetable oil
2 Tbsp. sugar
2 Tbsp. minced fresh ginger
Cooking Instructions
*Such as halibut, swordfish, tuna or salmon. Fillets taste great too. Place the fish in a glass or ceramic bowl. Mix marinade ingredients and pour over fish. Marinate, covered, for 2 hours. Arrange coals to one side of grill and light. When the coals are covered with gray ash, oil the grill rack to prevent sticking. Place the fish on the lower temperature side of the grill. Cook 4 minutes on each side, brushing with the remaining marinade. To test for doneness, press thumb on fish. It should be firm, not give (under cooked) and not hard to the touch (over cooked). Discard unused marinade. Total cooking time: 8 minutes. Serves 6.
