Fish Soup 2
Ingredients
2 lbs. fresh or frozen cod or halibut
1/2 C. olive oil
2 cloves garlic, mashed or minced
1/2 C. finely chopped parsley
1/2 C. sliced green olives
1 C. canned or fresh tomatoes
2 C. water
1/4 C. dry white table wine
Cooking Instructions
Cut fish into 2-inch square pieces. In a covered saucepan, combine the oil, garlic, parsley, sliced olives and tomatoes. Cook over medium heat for 5 minutes. Add the fish and continue cooking for 5 minutes, stirring frequently to prevent sticking. Add water, cover saucepan and simmer until the fish can be flaked with a fork, about 10 minutes. Add wine before serving. Serves 6.
