Fish Mexicali
Ingredients
1 1/2 C. Quick rice
1 Tbsp. butter or margarine
1 (1 lb.) jar salsa
1 tsp. thyme
1 or 1 1/2 lbs. fish fillets (trout
or redfish)
1/2 tsp. salt
1/4 tsp. pepper
2 Tbsp. margarine
1/2 tsp. paprika
1 sm. red pepper, sliced
1 sm. yellow pepper, sliced
Cilantro or parsley for garnish
Cooking Instructions
In microwaveable casserole, stir rice, 1 tablespoon butter, salsa and thyme. Cover and microwave on high for 7 minutes, stir once or twice, stir in peppers. Place fish fillets on top of rice. Salt and pepper. Dot with butter and sprinkle with paprika. Cover and microwave on high 4 or 5 minutes. Let stand 5 minutes. Garnish with cilantro or parsley. Serves 4 to 6. Aurora, Colorado
