Fish Marinade
Ingredients
1/2 C. Colavita or good olive oil
1 1/2 Tbsp. lemon juice, fresh
1 1/2 scallions, chopped
2 Tbsp. coriander leaves (cilantro),
fresh
1/4 tsp. ground pepper
1 tsp. fresh ground ginger root
2 Tbsp. rice vinegar
Fish – shark, swordfish or other
Cooking Instructions
Mix oil, lemon juice, scallions, cilantro, pepper, ginger root, and rice vinegar. Pour over fish in low dish. Refrigerate 1 to 2 hours. Grill or bake. *Burn fennel stalks in grill when cooking fish for added flavor.
