Elk Stroganoff
Ingredients
1/2 C. onions, chopped
1 C. butter or margarine
2 1/2 lb. elk sirloin, cut in strips
2 sm. cans mushrooms, undrained
3/4 C. tomato juice
2 C. bouillon or consomme
2/3 C. sherry
Salt & pepper to taste
Sour cream
Cooking Instructions
Saute onions in butter until golden; set aside. Roll meat in flour; saute in remaining butter. Place in baking dish or casserole; add all remaining ingredients except sour cream. Bake at 375 degrees until tender. Float islands of sour cream on top at serving time. Serve on cooked noodles.
