Drunken Casserole Cake
Ingredients
4 eggs; separated
1/2 C. sugar
1 C. flour
1 tsp. baking powder
1/4 tsp. salt
1/3 C. butter; melted
1 tsp. vanilla extract
Sauce
2 C. sugar
2 C. water
1/2 C. rum, brandy or sherry
Toasted, chopped almonds or toasted shredded coconut for topping
Cooking Instructions
Beat egg whites till stiff and add 4 Tbls. sugar. Beat egg yolks with remaining sugar and add to egg whites. Fold in the dry ingredients and add melted butter and vanilla. Pour into a 2-quart casserole. Bake at 375 degrees for 30 minutes. Remove from oven and make holes in the top with an ice pick. Pour sauce over warm cake.
