Dove A La Papiot
Ingredients
12 dove or quail
Salt
Pepper
3 onions, chopped
Parsley, chopped
Onion tops, chopped
2 bell peppers, chopped
1 1/2 lbs. of sausage
12 bacon strips
Cooking sherry
Cooking Instructions
Clean birds and season well with salt and pepper. Fill cavities with onion, parsley, onion tops and bell pepper. Cut sausage into small pieces and add this to bird’s cavities. Wrap birds with bacon strips and bake at 375 degrees for 60 to 65 minutes, applying sherry sparingly over birds very 15 minutes.
