Deer Parmesan
Ingredients
2 lb. deer steak
2 pkgs. spaghetti sauce mix
Mozzarella cheese
Parmesan cheese
Flour, salt, and pepper
3 Tbsp. salt
3 Tbsp. vinegar
Water
Cooking Instructions
Soak deer meat in 3 tablespoons salt and 3 tablespoons vinegar and water enough to cover meat. Soak overnight. Rinse good in cold water. Tenderize meat. Mix flour, salt and pepper together, coating each piece of meat with flour mixture. Brown in hot oil. Place meat in a large casserole. Mix spaghetti sauce as directed on package (use tomato sauce). Pour sauce over meat and bake covered in a 350 degree oven for about 30 minutes or until meat is tender. Remove from oven and sprinkle Parmesan cheese or Parmesan may be added to spaghetti sauce mix. Cover with Mozzarella cheese (sliced or shredded). Return to oven until cheese is melted. Beef or chicken may be used.
