Dairy Free Fruitcake
Ingredients
1 C. raisins
2 C. water
1 C. sugar
2 Tbsp. shortening
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. baking soda
2 C. flour
Cooking Instructions
Stew raisins in water until less then 1 C. of water remains. Chill until cold. Drain raisin juice into a C. Cream sugar, shortening and salt. Add enough water to raisin juice to make 1 C. of liquid. Add raisins and liquid to sugar mixture. Add cinnamon, nutmeg, soda and flour. Beat until well mixed. Bake in a greased and floured loaf or tube pan at 350 for about 1 hour.
