Curry Spread
Ingredients
1 each onion
2 each garlic cloves
1/4 C. margarine
1 Tbsp. curry powder
1 1/3 C. tomato ketchup
1 tsp. cider vinegar
2 each bay leaves
12 each whole cloves
Cooking Instructions
Slice onions and chop garlic finely. Heat margarine and sauté the onion and garlic in it until they brown. Stir in the curry powder and add the ketchup with the rest of the ingredients. Simmer for about 20 minutes, until it thickens. Remove bay leaves and cloves. This is best served hot on wholewheat toast or chilled on crackers. It is quite rich, so spread thinly.
