Cranberry Bread
Ingredients
2 C. flour
1/2 C. sugar
1/2 tsp. baking soda
1/2 tsp. salt
1 medium orange, juice and rind
hot water
1 egg, beaten
1 C. cranberries, halved
1/2 C. chopped walnuts
Cooking Instructions
Preheat oven to 350 degrees F. Sift dry ingredients together. Measure together orange juice, rind and melted margarine. Add enough hot water to make 1 C.. Stir liquid into dry ingredients. Add remaining ingredients. Cut aluminum foil to fit bottom of a 9 by 5 inch loaf pan. Spray sides of pan with vegetable pan spray. Add batter. Bake for 1 hour, or until toothpick inserted into center of loaf comes out clean. Let stand overnight for easy slicing.
