Cranapple Walnut Cake
Ingredients
1 C. light brown sugar (may use more)
1/2 C. vegetable oil
2 C. flour (may use whole wheat)
1 tsp. baking soda
1/2 tsp. nutmeg
1 tsp. cinnamon
1 tsp. salt
2 eggs
1 tsp. vanilla
2 C. cooking apples, sliced
1/2 C. walnut or pecan pieces
1/2 pound fresh, whole raw cranberries
Cooking Instructions
Cream together oil and sugar. Add eggs and vanilla, and beat well. Sift together flour and dry ingredients. Add to first mixture and stir until thoroughly combined. Stir in apples, cranberries and nuts. This is a very thick mixture that bakes into a wonderfully moist fruit cake. Heat oven to 350 degrees and bake in well greased 9″ x 13″ pan for 45-50 minutes.
