Crab And Rice Salad
Ingredients
1 C. uncooked brown rice
5 oz. crabmeat, fresh, steamed, flaked
1 large tomato, diced
1/4 C. chopped green pepper
3 Tbsp. chopped fresh parsley
2 Tbsp. red onion
1/2 C. plain nonfat yogurt
1-1/2 Tbsp. lemon juice
1/4 tsp. salt (optional)
fresh ground pepper
1 head lettuce
1 large tomato, cut in wedges
Cooking Instructions
In a medium saucepan, boil 2-1/2 C. water. Slowly add 1 C. uncooked brown rice. Cover and turn heat to low. Cook the rice for 45 to 50 minutes until tender, stirring occasionally. In a large salad bowl, combine all the ingredients, except lettuce and tomato wedges. Just before serving, line plates with lettuce, and spoon salad on top of lettuce. Garnish with tomato wedges.
