Cornish Hens
Ingredients
1 package stovetop stuffing mix 6 oz.
4 Cornish hens
Salt to taste
Freshly ground black pepper to taste
Sauce:
1 jar red currant jelly-10 oz.
1/2 C. golden raisins
1/4 C. butter or margarine
2 tsp. lemon juice
1/4 tsp. allspice
Cooking Instructions
Mix stuffing according to package directions and stuff hens. Sprinkle with salt and pepper. Place trivet in crock pot. For a 3 1/2 quart pot, place hens on end, neck end down. In saucepan combine jelly, raisins, butter, lemon juice, and allspice. Cook on low heat, stirring, until blended. Brush some of the sauce on hens in the pot. Brush hens once during cooking, if possible. Cover crock pot and cook on low for 5 to 7 hours. Spoon remaining sauce over hens at serving time.
