Chewy Apple Moons
Ingredients
3/4 C. apple juice concentrate
1/2 C. apples, dried
2 eggs
1/4 C. butter, melted and cooled
1 tsp. vanilla
1-1/4 C. flour
1/2 tsp. baking powder
1/2 tsp. cinnamon, ground
1/4 tsp. salt
1/8 tsp. nutmeg, ground
Cooking Instructions
Chop fruit. Combine apple juice concentrate and apples; let stand 10 minutes. Preheat oven to 350 degrees F. Beat eggs in medium bowl. Blend in concentrate mixture, butter, and vanilla. Add remaining ingredients and mix well. Drop Tablespoonfuls of dough onto greased cookie sheets. Bake 10 to 12 minutes until firm and golden brown. Cool on wire racks. Store in tightly covered container.
