Cherry Squares
Ingredients
1/2 C. packed brown sugar
1/2 C. margarine or butter, softened
1 egg
1/2 tsp. vanilla
3/4 C. all-purpose flour
1/2 C. whole wheat flour
1/8 tsp. ground allspice
1/8 tsp. ground nutmeg
Dash of salt
1/2 C. chopped walnuts
1 jar (12 oz.) cherry preserves
1/2 tsp. grated lemon peel
3 Tbsp. powdered sugar
Cooking Instructions
1. Beat brown sugar and margarine in medium bowl until fluffy. Beat in egg and vanilla until smooth. Mix in all-purpose flour, wheat flour, allspice, nutmeg and salt. Stir in nuts. Spread in greased square baking dish, 8 x 8 inches. Place baking dish on inverted saucer in oven. 2. Microwave at medium-high (70%) until top is dry, 5-10 minutes. If using oven other than Sharp Carousel, rotate dish 2 or 3 times during cooking. Mix cherry preserves and lemon peel; spread over batter. Let stand until cool. Sprinkle with powdered sugar. Chill before serving. Makes 16-24 candies.
