Calvins Fish Chowder
Ingredients
2 lbs. fresh or thawed fish fillets
(pollack, trout, haddock, cod,
whitefish, NOT flounder)
1/3 C. flour
1/3 C. margarine
1 1/2 C. onion, chopped
2/3 C. green pepper, chopped
1 1/2 C. diced raw potatoes
Salt & pepper to taste
2 C. tomato puree (or 6 oz. tomato
paste & 1 1/2 C. water)
1 Tbsp. Worcestershire sauce
1 1/2 qts. water
1 Tbsp. paprika
1 bay leaf
Dash of hot pepper sauce
6 whole cloves
Cooking Instructions
Cut fish into 1 inch pieces. Cook margarine and flour together at medium heat until flour is golden brown. Add onions and green pepper. Cook 5 minutes, add potatoes, tomato puree, water and seasonings. Cover and simmer 30 minutes. Add fish, cover and simmer 8 to 10 minutes. Serves 6 to 8.
