Breakfast Loaf
Ingredients
2 C. all-purpose flour
2 C. whole wheat flour
1 1/3 C. packed brown sugar
1/2 C. All-Bran cereal
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
2 beaten eggs
1 (16 oz.) container vanilla yogurt
1/2 C. milk
1 C. raisins
1/2 C. oil
Cooking Instructions
In large bowl, combine flours, sugar, cereal, soda, cinnamon and salt. Make a well in center. In medium bowl, combine eggs, yogurt, milk and oil. Add all at once to dry ingredients. Stir just until moistened. Do not overmix. Fold in raisins. Pour batter into 2 greased loaf pans (9×5). Bake in 350 degree oven approximately 55 minutes or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes. Remove and finish cooling. Freezes well.
